DIY Prog: Attempt 1.1

The batch I cooked for Attempt 1 was put into the fridge to cool. I ultimately think this was a mistake for cocoa butter that I will address in future attempts.

But I wanted to see what would happen if I put some of them into the freezer. So after cooling for several days, I took two trays from Attempt 1 and put them in the freezer for a couple days.

Today, I pulled them out and released them.

Result

They were still difficult to remove from the mold. But the first tray I released had significantly less breakage and better-formed pessaries.

The second tray had been sitting out for several (10-ish?) minutes while I did the first tray. It had a breakage rate more like the trays in Attempt 1. Maybe the little time to thaw contributed, but it could have also been my oily, gloved hands breaking them as I tried to push them out.

Conclusion

Freezing the Attempt 1 recipe may help achieve a higher success rate and better appearance, but keep them in the freezer as long as possible and don't do it with slippery gloves.

To try

Prepare the molds with mineral oil to encourage easier release.
